INGREDIENTS
1/3 cup | All purpose flour |
1/3 cup | Whole wheat flour |
1/2 teaspoon | Baking powder |
1/2 teaspoon | Baking soda |
2 tablespoons | Splenda sugar or sugar |
1/4 teaspoon | Cinnamon |
1/4 teaspoon | Pumpkin pie spice |
1 large | egg |
1/2 cup | milk |
1/3 cup | Greek vanilla yogurt |
1/3 | Pumpkin puree |
1 tablespoon | Olive oil |
1/2 teaspoon | vanilla |
Maple syrup |
Directions
- In a bowl, whisk together the first eight ingredients.
- In another bowl, mix the egg, milk, yogurt, pumpkin puree, oil, and vanilla. Add this to your dry mixture and stirin until just moistened.
- Spray your griddle with cooking spray and heat to medium heat. Pour the batter by 1/2 cupful onto your hot griddle and cook until the tops are bubbly and the bottoms are browned.
- Flip and cook until golden brown. Top with Maple syrup and enjoy.
