Pumpkin Pancakes

INGREDIENTS

1/3 cupAll purpose flour
1/3 cupWhole wheat flour
1/2 teaspoonBaking powder
1/2 teaspoonBaking soda
2 tablespoonsSplenda sugar or sugar
1/4 teaspoon Cinnamon
1/4 teaspoonPumpkin pie spice
1 large egg
1/2 cupmilk
1/3 cupGreek vanilla yogurt
1/3Pumpkin puree
1 tablespoonOlive oil
1/2 teaspoonvanilla
Maple syrup

Directions

  1. In a bowl, whisk together the first eight ingredients.
  2. In another bowl, mix the egg, milk, yogurt, pumpkin puree, oil, and vanilla. Add this to your dry mixture and stirin until just moistened.
  3. Spray your griddle with cooking spray and heat to medium heat. Pour the batter by 1/2 cupful onto your hot griddle and cook until the tops are bubbly and the bottoms are browned.
  4. Flip and cook until golden brown. Top with Maple syrup and enjoy.
